Breakfast Sopes



I had four sopes leftover from last night's dinner so I decided to give a breakfast sope a try.

I'm not going overboard on this one. Just a suggestion as to how to deal with leftover sopes.

We'll be cooking some bacon and poaching eggs.

Fry up some bacon. Eat some of it and give some to your kid it they love bacon. Save at least a strip for breakfast.

Blurry from the heat. Oops.
Get a pot of water on the boil.

Add 1 teaspoon of vinegar per cup of water. Around a tablespoon.

Add your eggs to the water using a bowl or something so that you can do it all at once.


Remove from the heat and let sit, covered for 3-5 minutes. 

3 minutes for runny yolk, 5 for almost hard. Over 5 for completely set yolks.


Fish them out with a slotted spoon. Be quick about it.


Place in the loving embrace of a sope that you heated up in the microwave for 45 seconds.


Top with some sauce from last night, or salsa, or hot sauce or whatever, some cheese, and some bacon bits. 

Consume.
