This is just a super simple lunch that my daughter constantly asks for and destroys when she gets it.
It's just a mini pizza on a sandwich thin. I love it because it's just the right size for little fingers and the texture is better than regular pizza for her.
You can obviously make this any way you feel like, I'm just posting it to give anyone the idea if they never had it.
Kid's Mini Pizzas
1 Sandwich thin
2 teaspoons of pizza sauce
2 tablespoons mozzarella cheese
1 slice of salami or pepperoni (or whatever toppings you want)

This couldn't be easier.
I start by preheating my toaster oven. It just seems to take forever if it isn't heated up first.
Grab your thin and open it up for the goodness.
Put a small amount of pizza sauce in the middle.
Spread it out with the back of a spoon.
Sprinkle on your cheese.
Cut up your salami/pepperoni and place it like so.
Cook it for about 5 minutes or until the cheese has melted and the toppings are warmed.
The biggest thing for me here is that I don't want it too crunchy. She seems to like it just firm enough to eat as when it's crunchy it seem really dry.
Wait for it to cool for a few minutes and cut into wedges.
Serve your mini personal pizza to a grateful toddler.
