Every time I make it (but fail to post it) I always have leftovers and she always asks for it by name.
"Daddy, pie! Daddy! PIE!"
I know it's not the greatest thing for her, with the butter and flour and all, but she just loves it so much that I decided to make her a quick veggie version for lunch.
The ingredient list is short:
1/2 cup of frozen veggies (any kind your kids eat)
2 tablespoons butter
1/4 cup of flour
~3/4 cup of chicken/veggie broth
salt and pepper

Start by melting the butter in a small pan over medium heat.
Add your veggies. I try to cut up the big pieces.
Season with salt and pepper and let them go for about 5 minutes until softened a little.
Sprinkle on the flour and stir to combine.
It'll turn into a paste really quick. Just keep on stirring for about 2 minutes. You want the raw flour taste to be cooked out.
Add a little broth at a time and stir until it comes to temp.
It'll be lumpy at first, but as soon as it gets hot, everything will homogenize.
Keep adding the broth until it looks nice and creamy.
If it's too runny, let it cook for a minute. It'll thicken back up.
I toss an ice cube into a bowl with the mix to cool it down quickly as she's usually screaming, "PIE PIE PIE!" at this point in the cooking process.
If you have leftover biscuits or toast or whatever, they'll eat it up.
Make a bigger batch, toss in some leftover chicken and have at it yourself!
