Happy St. Patrick's Day!

I finally corned my own beef!

I used Alton Brown's recipe and was unfortunately a little heavy on the cinnamon but all in all it turned out very good. I'll just skip the cinnamon stick next time. 

I also just made my standard mashed potatoes and cooked some cabbage with a leek and butter (with some of the beef braising liquid) in a deconstructed colcannon kind of thing that was great. 

Also braised some carrots in some of the cooking liquid from the beef on the stovetop. Easy and really, really good!

I liked this version of the classic corned beef and cabbage boiled dinner much more than the original. Everything was cooked properly and not over done (as it was all separated) and everything worked well with everything else. Very happy.
